Soup Sunday: Corn Chowder
There is seriously nothing we love more than making a delicious, hot soup on a Sunday evening. That nostalgiac feeling of being cozy, warm, and full, at home with mom and dad, is what we aim for with our Soup Sundays! This was my first attempt at corn chowder, so it may have some adjustments in the future, but it was delicious enough that we had to share! We hope you all try it out and love it, or add something and make it your own! Let me know what you decide to do! :)
What you need:
2 potatoes
1 bag of frozen corn
1 onion
1/2 cup of chopped carrots
2 cloves of garlic
3 cups of milk
1/2 cup of water
chives
salt, pepper, garlic powder
olive oil
What to do:
Chop up and prepare your potatoes, onion, garlic, and chives
Drizzle a small amount of olive oil into your pot
Add your onions and garlic, and sautee until onions are translucent
Add your potatoes and let them sautee for a few minutes as well
Stir in milk, water, and corn
Add chives and seasonings, to your liking
Let simmer on low for about 30-45 minutes, until potatoes are soft and perfect!
Add more water to your soup if necessary or desired! Enjoy!
