Easy Peasy Curry

Before the both of us went vegetarian, chicken and curry over rice used to be one of our favorite dishes! We hadn't eaten a curry dish again for a few months after becoming vegetarians because we weren't able to figure out a good alternative to the chicken. This dish was extremely irresistible, so it wan't long before Issy randomly went to the grocery store and grabbed things that she thought might go well with Patak's Creamy Coconut & Spices curry sauce. Turns out she created our new favorite curry dish! The sugar snap peas add the perfect amount of crunch, color, and sweetness. While the roasted garbanzo beans are a delicious chicken replacement, with tons of protein and fiber! This meal is awesome because it's healthy, delicious, easy, and super quick! Ingredients:
2 cups white rice
4 cups of water
2 cans garbonzo beans
olive oil
salt, pepper, goya, garlic powder, parsley
1 jar of Patak's Creamy Coconut & Spices curry sauce
1 frozen bag sugar snap peas
The first step to making this dish is to set the oven to 375 degrees. This might seem a little high at first, but you will only be baking the garbanzo beans for about 10-15 minutes! Next, fill a pot with the 4 cups of water and 2 cups of rice. You can keep this on medium, since it shouldn't take too long to cook. While your oven is preheating, start preparing your beans! Drain and rinse your chick peas and pour them out onto a cooking sheet. Layer the beans in olive oil, and add your seasonings! Roast these garbanzo beans for about 15 minutes, and be careful not to let them cook for too long. They will still taste pretty amazing, but if they bake for too long, they will become somewhat crunchy and don't seem to make as yummy of left-overs. We usually buy frozen sugar snap peas and will just boil them until they're done, or throw them in the microwave, if steam-able. Throw it all into a bowl, nice and pretty, and you're ready to enjoy this simple Indian dish! This recipe is so quick and easy, and you will be so happy you tried it!
